Are you planning on getting a little bit tipsy this Christmas? Well then welcome to the KID FREE zone!  I may be parading around pretending to be a grown up 37-year-old mother of two, but deep down, I am still a 22-year-old college student with a penchant for consuming multiple Jell-O shots in the swimming pool. So this post is a nostalgic ode to my former (much wilder) self. The self that wouldn’t get ridiculously excited at the thought of being in my pyjamas and in front of the fire on the sofa by 8pm on a Saturday night.  But nowadays? Ah, that’s my HEAVEN!

These healthier Jell-O Santas also make the perfect dinner party gift.  Trust me, you will score major brownie points with the host if you turn up with these…unless of course, it’s your grandma, in which case I’m not too sure!

Adding to its list of credentials has to be the fact that it is so very easy to make.  It only takes five minutes of hands on prep time and then an hour to set in the fridge.  It is low in sugar (only 3 tbsp of maple syrup in the whole recipe) and also contains superfood powders for added micronutrients, because who doesn’t want to squeeze in a little extra antioxidant goodness whilst you’re getting wasted?

The gelatin powder itself was from grass-fed, pasture-raised beef and has a whole host of benefits that you would never associate with a Jell-O shot! Gelatin provides amino acids that can actually strengthen the gut lining and help to lower inflammation.  The amino acid Glycine, in particular, is great at helping improve digestion, which is what might prove to be pretty darn helpful after consuming a massive Christmas meal. It’s also important for both joint and skin health, so let’s beautify ourselves at the same time as getting tipsy!  Cheers to all!

INGREDIENTS

Vodka & Acai Powder recipe 

·     250ml Juice of your choice (I used Innocent Raspberry Super Juice)
·     125ml Vodka
·     3 tbsp Maple Syrup
·     6 tbsp Gelatin Powder
·     1 tbsp Acai Powder (optional)

Mulled Wine recipe

·     375ml Mulled Wine
·     6 tbsp Gelatin Powder 

METHOD

Vodka & Acai Powder recipe 

·     In a small saucepan, heat the juice and maple syrup together until just before it starts to boil.
·     Turn down the heat and add the vodka and acai powder, if using.  Mix well. 
·     Add the gelatin one tablespoon at a time and combine well.  
·     Make sure that each tablespoon of gelatin is fully dissolved in the liquid before adding the next.
·     Remove from the heat and carefully place the mixture into the moulds.  
·     Put in the fridge to set for at least an hour.
·     Store in a sealed jar in the fridge. 

Mulled Wine recipe 

·     In a small saucepan, heat the mulled wine until just before it starts to boil.
·     Turn down the heat and add the gelatin one tablespoon at a time and combine well.  
·     Make sure that each tablespoon of gelatin is fully dissolved in the liquid before adding the next.
·     Remove from the heat and carefully place the mixture into the moulds.  
·     Put in the fridge to set for at least an hour.
·     Store in a sealed jar in the fridge. 

NOTE – I used Santa moulds, but any silicone chocolate mould would work too.  Or else just pour onto a parchment lined dish and cut into cubes once they’ve set.
